Nuu-chah-nulth Cookbook

Uu-a-thluk, a British Columbian aquatic management organization comprised of 15 Nuu-chah-nulth First Nations, has just released a wonderful cookbook. Featuring 65 local, popular First Nations dishes and 24 full-colour recipe photos, the Čamus cookbook is a great reference book and a must have for those wishing to try authentic West Coast cuisine. Endorsed by the Nuu-chah-nulth Council of Ha’wiih, the authors consulted with elders from the west coast of Vancouver Island and northern Washington state to obtain traditional recipes and methods. There is valuable information on everything from fowl preparation to the use of seaweed within Nuu-chah-nulth cooking.
